How Do I Find Chemical Formulas?

For example ‘Hydrochloric acid’ how would i determine its chemical formula?
any links regarding chemical formulas would be of help.
also other questions: what is a polyatomic ion? and in the chemical formula Cu(No3)2 – why doesn’t Cu have 2 atoms?
